**What is Bresaola?**


Bresaola is a traditional Italian air-dried, salted beef that hails from the Valtellina region in northern Italy. This delicacy is made from lean cuts of beef, typically eye of round, which are carefully seasoned with a blend of salt, spices, and herbs. The meat is then aged for several months, resulting in a tender, flavorful, and slightly sweet cured meat. Bresaola is often thinly sliced and enjoyed as an appetizer, commonly served with arugula, a drizzle of olive oil, lemon juice, and shaved Parmesan cheese. Its delicate taste and refined texture make it a favorite among charcuterie enthusiasts.
